One 'writes' his dishes, the other wants to 'eat' his ideas. Alexandre Gauthier is a chef recognised worldwide for his creativity and unique identity, earning him a second Michelin star in 2017. He talks about the rhythm of flavours, the crescendo, the rupture of flavours and the creation of a series of emotions. Alexandre Gauthier loves art and the encounters it brings him, especially with pioneers such as Johann Le Guillerm, a renowned contemporary circus artist. The chef and the artist share the same way of working: laboratory research and artistic exploration combined with a pronounced taste for transgressing established codes. For ENCATATION, they have combined their skills: the cuisine is by the chef, and the objects, shapes and scenography come from 'Attraction', the artistic research that Johann Le Guillerm has been carrying out for the last 20 years.
ENCANTATION is an invitation to a strange ritual that will allow you to experience, in an existential way, what it is like to savour concepts with both your stomach and your mind. The two human extremities are connected to a spine, allowing you to stand upright. ENCANTATION involves the whole body, imagined as a place of total experience.
